These look great! I love to make financiers with my leftover egg whites and this flavor combo sounds dreamy. I bet it would also be delicious to sub in buckwheat flour for the AP. Coffee-walnut cake is a favorite in our household, too--so much so that my husband requested it for his birthday earlier this week!
Jen! You read my mind. I am obsessed with buckwheat, and as soon as I tasted these, I wanted to try them with buckwheat instead of all-purpose flour. If you make it with that substitution, let me know. I might try my hand at it as well.
Yay! I have actually subbed it into David Lebovitz's recipe previously, with additions of powdered espresso and chopped chocolate. It worked out really well, so I bet it's a dream with these flavors, too!
