Our family loves chestnuts! I’ve no idea why I didn’t think of them as an addition to bread before - what a great idea, will try this, thanks

I tried baking with chestnuts in my bread for the first time and paired them with walnuts inspired by your bake. Was a great success - thank you! https://open.substack.com/pub/benssourdough/p/chestnut-and-walnut-sourdough-bread?r=2t1ua&utm_campaign=post&utm_medium=web&showWelcomeOnShare=true

Everytime I think you and I couldn't possibly be more aligned, you publish another post that speaks to my soul, Martin. Chestnuts! Tools for scoring chestnuts. Chestnut bread. Chestnut cream. An entire website and shop devoted to reviving the American chestnut. These are the wonders I come to you for. Thank you, thank you.

Love the sound of this Martin! I don’t have a sourdough starter at the moment but might try to adapt this recipe using just a pinch of yeast or finally try my hand at yeast water risen breads!

It should work without the sourdough since I call for a bit of yeast anyway. The sourdough just boosts the flavor and color.

That’s what I thought as well! Thank you!
